A story infused with seasonal flavors
Every story has its roots in some beautiful forgotten history, but the story of Joulia really does come from beauty, as it is in honor of my grandmother whose mother name was Jamilé, the Lebanese word for “a beautiful woman”. Joulia faithfully inherited a cuisine that we adore & passed it on to us in the most delicate details.
Joulia left with us a love for food and country. We all come from the same mountain, the same terrain, overlooking the dazzling Mediterranean. In the coldest of winters, the horizon is a blend of magnificent sea waves capped with the snowy Ehden hills. And in the warmest of summers, the tranquil waves carry the scent of pine and walnuts and juniper in their wake.
As each season evolves, we at Joulia flow along with it, in harmony with mature. We source out ingredients from local artisans, farmers, and family businesses to bring you the real taste of the land of Jamilé & Joulia.
Kebbé
While Kebbé is a Lebanese traditional dish, its roots lie in Ehden-Zgharta. This little delicacy of meat and burghul is an emblem of the area, our local pride and part of our identity. You will find many varieties of Kebbé all over Levantine cities, but those that are traditional to Ehden-Zgharta remain so: Kebbé Mamdoudé, Hommos Kebbé, Kebbé Krass (balls) to name only a few.
Kebbé is so well engrained in the local tradition of Ehden-Zgharta that these are the only areas in Lebanon that have specialized bakeries for Kebbé. Every area has its Sunday tradition, but the locals of Ehden-Zgharta can be found queuing in line in front of Kebbé bakeries to have their trays cooked for lunch. In this region, Kebbé is synonym for good health and strength.
