An Ehden-Zgharta signature and a vegan dish. Our ancestors had to reconcile their love for Kebbé & lent sacrifices as no meat is allowed for fifty days. The result is a refined Kebbé mixing burghul, chickpeas & rich spices.

Ingredients
  • - 1 cup of presoaked chickpeas
  • - 1.5 cups of fine burghul
  • - 1 medium onion, finely chopped
  • - 1 tbsp dried mint
  • - 2 tbsp crushed kaak
  • - Salt and white pepper
  • - 1 cup of flour
  • - Olive oil
Directions
Step 1
To prepare the chickpeas, soak them overnight in water and then drain and remove the separated skin.
Step 2
In a bowl, mix all the ingredients together, keeping the flour aside.
Step 3
Once the mixture is even, start adding flour and water gradually until the mixture forms a proper dough-like consistency.
Step 4
Now take the mixture and spread out evenly onto an oven dish.
Step 5
Drizzle with olive oil and place in a preheated oven for 20-30 minutes until cooked.
